Responsibilities

As a Chef-Cook at VIA Rail Canada Inc., your role goes beyond the culinary aspects, encompassing a range of responsibilities to ensure the seamless operation of the onboard kitchen and the satisfaction of passengers. Your daily tasks include, but are not limited to:

Menu Planning and Direction

  • Develop creative and diverse menus suitable for the train’s clientele.
  • Plan and direct the execution of food preparation and cooking activities, ensuring the highest quality and presentation standards.

Food Preparation and Specialized Cooking

  • Execute the preparation and cooking of meals, considering the dietary restrictions and preferences of passengers.
  • Specialize in crafting unique and appetizing dishes to enhance the overall dining experience on the train.

Adaptation for Dietary Needs

  • Modify and adapt dishes to accommodate customers with food allergies, intolerances, or specific dietary requirements, demonstrating flexibility and consideration for individual needs.

Quality Assurance

  • Monitor and maintain the quality of food throughout the cooking process, adhering to established standards.
  • Implement portion control measures to ensure consistency and customer satisfaction.

Supply Chain Management

  • Manage the requisition of food items, kitchen supplies, and equipment, maintaining appropriate inventory levels for efficient kitchen operations.

Supervision and Leadership

Maintain availability to work on weekends, holidays, and during extended periods away from home, up to 60 hours in a 4-day workweek.

Important Details about the Job

  • Seasonal Position: From March until October with the possibility of being called back for the following year.
  • Schedule & Working Conditions: Available to work in a small and warm environment, including washing dishes. Weekend and holiday availability. Up to 60 hours in 4 days. Extended periods (approx. 4-5 days) away from home.
  • Starting Date: March 4th, 2024
  • Salary: Between $30.33 and $35.57 per hour.

Requirements

You are well-suited for this challenge if you:

  • Have a high school diploma.
  • Hold a current sanitation or food safe certificate and a Red Seal Certification.
  • Have three years of experience in line cooking.
